Baked Ziti


We watched A Lot of Gordon Ramsay's cooking shows, and saw a lot of great chefs win. They also had cookbooks, so we started collecting our fave chefs books, and starting cooking! Of course Italian dishes are my faves, but I sure am having fun making all the dishes :-) 

3 cups uncooked Ziti or Penne

4-5 Italian sausages casings removed

2 garlic cloves, minced

1 small onion chopped

*** Spaghetti sauce from Testa Dura sauce post **** or your own sauce

1/2 cup sour cream 

4 slices of provolone

1/4 of a bunch of spinach 

1 cup grated mozzarella 

1/4 cup parmesan cheese

fresh basil 

Boil ziti or penne until almost done (since it will cook more in the oven) 

Over Medium heat in a saucepan brown the sausage. Add garlic and onion stirring until fragrant and soft. (5 minutes) Drain the fat from the pan. Stir in the spaghetti sauce and spinach and simmer 15 minutes.Stir in the soiur cream and remove from heat. 

Preheat the oven to 350F. Lightly grease a 1 quart baking dish. Put half noodles in the bottom, then the provolone, and half the other cheeses. Pour half the sauce over top getting the edges. put the rest of the noodles, rest sauce and top with remaining cheese.Cover and Bake for 20  minutes, then take lid off and cook another 15 minutes. Sprinkle with parmesan and fresh basil, Serve. 4 portions.

Pulled Pork BBQ


Have you ever found the perfect recipe, just days before you needed it? That's what happened with this one. We were hosting a BBQ and wanted something different than burgers and dogs. So we thot about making shishkabobs. The idea was ok, but we were still missing something, when poof, in my email this recipe appeared from Kraft! Perfect timing. We "guinee pigged" a few Friends of ours to test it out, and it was a hit! So if your having a BBQ soon, here's a great addition.


1 pork shoulder or butt (5 lb./2.2 kg)
1 cup BULL'S-EYE BOLD ORIGINAL Barbecue Sauce
1 cup pineapple juice
2 tsp. minced fresh garlic
2 tsp. grated gingerroot
16 sandwich buns, split


PLACE meat in disposable foil pan. Mix barbecue sauce, pineapple juice, garlic and ginger. Pour one-third of the barbecue sauce mixture over meat; cover and refrigerate 20 min. to marinate. Refrigerate remaining barbecue sauce mixture until ready to use. Meanwhile, preheat barbecue to medium heat.
PLACE meat (in foil pan) on grate of barbecue; cover with lid. Grill 3 to 3-1/2 hours or until meat is cooked through (160ºF). Remove meat from barbecue; cover with foil. Let stand 10 min. Meanwhile, pour remaining barbecue sauce mixture into large saucepan; cook on medium-low heat until heated through, stirring occasionally.
SHRED meat with two forks or chop into bite-size pieces. Add to saucepan; toss to coat. Serve in buns.

Pork Roast

One of my favorite dishes that my mom made was her pork roast. She would make it in a cast iron pan in the BBQ, with veggies all around it.... it was soooo good. I am NOT a BBQ'r... kinda frightened of the thing to tell you the truth.... but Dean is a BBQ master so... I dug out my mom's recipe and we tried it. It was gooood!


Weigh your pork roast and calculate 45 minutes per pound. The method is the same for BBQ and oven so you have your pick as to how you wanna cook it.

Preheat to 325 F
Score the top of the roast and brush with butter
Sprinkle, salt, pepper and paprika on top.

Place roast in Oven (bbq)

Boil potatoes, onions and carrots 15 minutes
During the LAST 45 minutes of time left to cook the roast place the potatoes around the roast.
10 minutes later add the carrots and onions and turn the potatoes.

Take the roast out and let it sit for 10 minutes after it's cooked.
Turn the heat up to 425 F, add some butter to the veggies, stir them around and cook the 10 minutes that the roast is sitting.
